Sweet potato and butternut squah soup with feta and lentils

A deliciously filling sweet potato and butternut squash soup, topped with lentils, spring onions and feta cheese. Worth a try!

Ingredients

2 chopped onions
2 sliced garlic cloves
15 g fresh ginger, finely chopped
500 g butternut squash
500 g sweet potato
1 l vegetable stock
1 can of drained lentils (160 g)
100 g (vegan) feta cheese
2 spring onions
Olive oil
Pumpkin oil

Preparation

    Sauté the onion, garlic and ginger in a little olive oil. Add the butternut squash and sweet potato, and sauté for a few minutes. Then add the vegetable stock and bring to a boil.

    Gently boil the soup for 15 minutes, then puree with a hand blender or food processor to get a smooth soup. Season to taste with salt and pepper.

    Warm the lentils briefly in a pan or microwave.

    Serve the soup in bowls, then add the lentils. Crumble feta cheese over the top and garnish with thinly sliced spring onion and a drizzle of squash oil.
