Preheat the oven to 180 °C.
Wash the sweet potatoes and peel them if desired. However, the skin is nutritious, so it can be left on. Cut the potatoes into wedges.
Grease an ovenproof dish with olive oil. Put the wedges in the dish and sprinkle salt and pepper on top. Drizzle some more olive oil over the top.
Bake for 30-35 minutes in the middle of the oven. Sprinkle the chopped parsley over the potatoes.
