A wonderfully simple dish that’s great as a replacement for potatoes!
Preparation

Preheat oven to 355º F / 180º C.

Rinse the sweet potato and skin it if desired. You can easily eat it with its skin. Most of the healthy substances are in the skin! Cut the sweet potato into parts.

Put olive oil on the bottom of a baking dish. Place the sweet potato parts in the dish. Sprinkle salt and pepper over the potatoes. Drizzle some olive oil on top of everything.

Bake in center of oven 30 to 35 minutes. Sprinkle the chopped parsley over the potatoes.
