Sweet potato skewer with sauce of lime, tahini and honey

You can grill this sweet potato skewer on the barbecue in no time. Extra tasty with the special sesame-lime sauce. Will you give it a try?

Ingredients

  • 4 sweet potatoes
  • 1 yellow bell pepper
  • 2 red onions
  • 1 lime
  • 2 tbsp Tahini
  • 1 tbsp honey
  • 2 tbsp oil
  • 1 tbsp sesame
  • Fresh coriander

Preparation

    Bring a pan of water to a boil. Halve the sweet potatoes lengthwise and cook them for about 15 minutes until done. Remove the sweet potatoes from the pan and allow them to cool down.

    Clean the red onions and yellow bell pepper. Cut the bell pepper into equal pieces and the onions into 4 or 6 segments. Cut the sweet potatoes into equal pieces as well.

    Thread alternately 3 pieces of sweet potato on a skewer with a piece of onion and bell pepper in between. Brush the skewer with a little oil. Grill the skewers on the barbecue.

    To make the dressing, mix 2 tablespoons of tahini sesame paste with 1 tablespoon of honey, 2 tablespoons of oil, lime juice, salt, and pepper, and add 2 tablespoons of water until you achieve a smooth sauce.

    Garnish the sweet potato skewers with chopped fresh coriander and some sesame seeds.
