Toast with vegan cream cheese, kumquats and pistachio nuts

Toast, a timeless classic for lunch, and for good reason. The possibilities are endless! Chances are you’ve never tasted anything quite like this. It offers a unique creamy combination of sweet, sour, bitter, and spicy flavours. So, what are you waiting for?


4 slices of wholemeal bread
25 grams of plant-based butter
150 grams of vegan cream cheese (garden herbs)
1 punnet of Kumquats
2 tbsp. honey
2 handfuls of pistachio nuts
half punnet of cress

    Spread the sandwiches on both sides with a thin layer of plant- based butter. Toast them in a frying pan or toaster until crispy.

    Kumquats look like miniature oranges with edible skin. Wash them before slicing them. Cut them into thin slices. Keep the ends separate as well as any seeds. The taste is bittersweet and the fruits contain a lot of vitamin C and potassium. Peel the pistachio nuts and cut the cress.

    Spread the toast with a layer of vegan cream cheese. Cover the toast with slices of kumquat and pour some honey on top. Garnish with pistachio nuts, cress and coarsely ground pepper.
