Dinner bowl with sweet potatoes and pomegranate


1 sweet potato cut into cubes 2 cm in size
75 g black beans (small tin)
100 g spinach
30 g pomegranate seeds
¼ cucumber, sliced
1/2 lime
1/2 teaspoon chilli powder
1/2 teaspoon cumin
1/2 teaspoon paprika
Olive oil
Salt and pepper

An easy and healthy meal in a bowl with sweet potatoes and black beans. Dressed with lime juice and pomegranate. After a long stressful day, I usually opt for a healthy meal which is quick to prepare. This dinner bowl is really tasty and easy to make.

    Mix the herbs with one tablespoon of olive oil.

    Sauté the sweet potato cubes with half the herb mixture in a frying pan until they are cooked through (15 minutes).

    Gently heat up the black beans in a pan together with the other half of the herb mixture.

    Place spinach, beans, cucumber and sweet potatoes into a bowl. Dress with lime juice and the pomegranate seeds.
