An easy and healthy meal in a bowl with sweet potatoes and black beans. Dressed with lime juice and pomegranate. After a long stressful day, I usually opt for a healthy meal which is quick to prepare. This dinner bowl is really tasty and easy to make.
1 sweet potato cut into cubes 2 cm in size 75 g black beans (small tin) 100 g spinach 30 g pomegranate seeds ¼ cucumber, sliced 1/2 lime 1/2 teaspoon chilli powder 1/2 teaspoon cumin 1/2 teaspoon paprika Olive oil Salt and pepper
Mix the herbs with one tablespoon of olive oil.
Sauté the sweet potato cubes with half the herb mixture in a frying pan until they are cooked through (15 minutes).
Gently heat up the black beans in a pan together with the other half of the herb mixture.
Place spinach, beans, cucumber and sweet potatoes into a bowl. Dress with lime juice and the pomegranate seeds.
