Goat cheese and mango salad with pomegranate seeds and kumquat vinaigrette

Ingredients

1 mango
100 g sugar
Mixed salad leaves (Mesclun)
Slice of goat cheese
1 pomegranate

Vinaigrette:
1 tbsp. honey
5 kumquats
1 splash of olive oil

A wonderful goat cheese salad with caramelised mango, pomegranate, and kumquat vinaigrette.

    A wonderful goat cheese salad with caramelised mango, pomegranate, and kumquat vinaigrette.

    Caramelise 2 tbsp. water and 100 g sugar and sauté the mango in this, turning occasionally. Remove the mango from the pan in time and allow to cool.

    For the vinaigrette, mix the honey, juice from the kumquats, and a splash of olive oil.

    Place the lettuce leaves on a large serving board or plate, drizzle with vinaigrette and then place the mango slices on top.

    Heat the goat cheese in the oven for a few minutes and then place on top of the salad. Cut the pomegranate in half and tap the outside with a spoon to sprinkle the seeds over the salad.
