Nashipear spring salad bowl with ginger dressing

This is a crispy salad with recognisable Asian flavours. With nashi pear, you know, that apple that tastes like a floral juicy pear. The combination of flavours in this salad bowl are perfect for a party.

Ingrediënts

2 nashi pears
2 oranges
1 red bell pepper
1 large carrot
1 quarter red cabbage
½ cucumber
4 tbsp. soya beans
2 tbsp. olive oil
2 tsp. fresh ginger
1 lime
2 cloves of garlic
1 small shallot
1 tbsp. sesame seed
fresh coriander or leaf parsley

Preparation

    Grate the orange peel from one orange and keep it as a seasoning for the dressing. Cut off the peel around the two oranges. Carefully cut out the orange slices and collect them in a large mixing bowl.

    Squeeze the core of the oranges for the dressing. We're going to make the dressing straight away. Add grated ginger, lime juice and olive oil to the orange zest. Press two cloves of garlic, chop a shallot and finely chop coriander or parsley. Mix this together with the sesame. Add salt and pepper to taste. Taste the dressing and set aside.

    Now we are going to cut all the crispy ingredients for the salad bowl. Cut the nashi pears around the core and cut into thin slices. Cut the red pepper into small cubes and the cucumber into half slices. Grate the winter carrot into strips and scrape or finely chop the red cabbage.

    Mix all ingredients together. Serve in a nice bowl, sprinkle with a little dressing and fresh herbs and serve the rest of the dressing separately. This delicious salad bowl is perfect for lunch but also fits as a side dish to many different chicken, fish and meat dishes.
