Scallop ceviche with mangosteen

Want to serve a surprising starter this Christmas? Look no further! The combination of sour, sweet and salty comes together perfectly in this dish. Sour from the citrus, sweet from the mangosteen and salty from the brininess of the scallop and trout roe.

Ingredients

  • 300 g scallops
  • Spring onion
  • 1 lime
  • 2 lemons
  • 2 tbsp soy sauce
  • 2 cm ginger or 0.5 tsp ginger powder
  • 6 mangosteens
  • Small red chili
  • 2 tbsp olive oil
  • 1 tbsp agave syrup

 

Garnish

  • Trout roe
  • Vene cress
  • Edible flowers

Preparation

    Slice the scallops as thinly as possible.

    Squeeze the juice from the lime and lemons into a large bowl. Add the soy sauce, agave syrup and ginger.

    Chop the spring onion and the chili pepper, and add them to the citrus mixture.

    Place the scallop slices in the citrus mixture, mix well and let sit for 30 minutes.

    Cut the mangosteen in half and remove the fruit.

    Arrange the scallop slices on a plate, scatter the mangosteen over them, and top with the trout roe, watercress, and edible flowers.
