Vegetarian couscous with papaya


  • 300 grams of couscous
  • 1 papaya
  • 1 red onion
  • 1 thumb-size piece of ginger
  • 1 red pepper
  • 1 lime
  • 2 passion fruits
  • fresh coriander
A delicious vegetarian dish, but you can also serve it with chicken or fish. The combination of the warm couscous and fresh papaya is delicious.

    Cut the papaya in half, remove the seeds and peel off the skin. Cut the papaya into strips of equal size.

    Put the couscous in a pan and pour boiling water over it up to one centimetre above the couscous. Season the water with salt and pepper (or use a stock cube). Pour in a dash of olive oil. Stir and cover the pan and leave the couscous cook for 10 minutes on the counter, not on the hob.

    Peel the red onion and cut into strips. Cut the red pepper into thin slices (use only a part if you do not like spicy). Peel the ginger and cut into small pieces. Carefully mix these ingredients through the sliced papaya.

    The dressing is made from lime juice, passion fruit flesh, a little chopped coriander, a dash of olive oil and a pinch of salt and pepper. If you like, you can add a little sweetness to the dressing by adding some honey.

    Stir part of the dressing through the papaya and mix in the couscous. Garnish the dish with coriander and serve lukewarm.
