Toast with avocado egg salad


2 tbsp. Greek (or regular) yogurt
2 tbsp. mayonnaise
6 hard-boiled eggs, cooled and cubed
1 large avocado (or two small avocados), cubed
Salt and pepper

This avocado egg salad is a delicious variation on traditional egg salad. Wonderfully light because of the yogurt, mixed with pieces of avocado. Perfect for rolls, sandwiches, crackers or salads.

    Mix the yogurt and mayonnaise.
  • 2
    Cut the eggs and avocado(s) into cubes and stir this into the mixture. Season with salt and pepper to taste.

    Serve on sandwiches, crackers or a bed of lettuce.
