Peel and finely grate the ginger. Put a pan on a low heat and add the 3 cups of water. Add the grated ginger and the cinnamon stick. Juice 1 lime or 1 orange (or both if you like) and add the juice to the pan.

Allow the tea to simmer gently until light-brown in colour. Stir occasionally so that the ginger does not stick to the bottom of the pan.

The tea is now ready to drink. Strain the tea first if you don’t want pieces of ginger in your cup.
