Sweet potato turkey hash


1 large sweet potato, peeled and diced
1 tbsp. butter
2 tbsp. olive oil
1 red onion, chopped
1 red sweet pepper, diced
500 g roasted turkey breast, diced
salt and pepper
4 large eggs
1 tbsp. chopped chives
1 tbsp. chopped parsley

Hash is a typical American potato dish which is often made using grated potatoes with leftover meat and vegetables. This one is made with diced sweet potato. Americans often eat hash at breakfast, lunch or dinner. It's a favourite with our farmer Regan!

    Place the diced sweet potato in a pan. Add enough water to cover. Bring to the boil and cook for 3 to 4 minutes (until just barely soft). Drain and set aside.

    Heat the butter and 1 tbsp. of the olive oil in a large frying pan over medium heat. Add the onion and sweet pepper and fry until golden for about 5 minutes.

    Add the diced sweet potato. Fry the mixture for another 6 to 7 minutes or until the cubes become crunchy. Add the remaining olive oil and the diced turkey breast. Season to taste with salt and pepper and fry for another 2 minutes to complete.

    Make 4 spaces in the mixture in the pan and break an egg into each one. Turn down the heat to a low setting and cook for 5 minutes until the eggs are set. Sprinkle with the chopped chives and parsley and serve immediately.
