Sweet potato soup with ginger & lime


olive oil
1 onion, minced
3 garlic cloves, minced
1 teaspoon grated fresh ginger
500 g sweet potatoes, peeled and in chunks
1 litre stock
200 ml coconut milk (canned)
juice of 2 limes

The combination of sweet potatoes, ginger and lime makes this soup really special.

    Heat a splash of olive oil in a frying pan, add and gently sauté the onion, garlic and ginger.

    Add the sweet potatoes to the pan and sauté everything a few minutes longer. Add the stock. Bring to the boil, then turn down the heat and simmer for 15 minutes.

    Puree everything with a hand blender and add the coconut milk and lime juice.

    Simmer for another 10 minutes. Season with salt and pepper.
