Sweet potato soep with carrots, onions and bell pepper
1 sweet potato
2 red onions
1 red bell pepper
3 cloves of garlic
1 tbsp. olive oil
2 cubes vegetable bouillon
750 ml water
Salt and pepper to taste
You can make this wonderful, homemade soup from sweet potatoes, carrots, onions, and a red bell pepper in a flash.
Peel and dice the onions and garlic. Peel the sweet potato and carrots. Remove the seeds and septums from the bell pepper. Chop up all of the vegetables.
Heat 1 tbsp. of olive oil in a soup pot, and then sauté the onions and garlic in this for 3 minutes over low heat. Add the sweet potato, carrots, and bell pepper and sauté for 5 minutes over medium heat. Stir occasionally.
Add the water and bouillon cubes, and bring to a boil. Cover the pot and allow the soup to simmer for 20 minutes. Stir occasionally.
Blend the soup using a mixer. Taste and then season the soup with salt and pepper if needed.
Ladle the soup into bowls. If you want, garnish the soup with a little finely chopped parsley.
