Sweet potato soup with carrots, onions and bell pepper

With this recipe, you can quickly prepare a delicious homemade soup made with sweet potato, carrot, onion, and bell pepper.

Ingredients

1 sweet potato
2 carrots
2 red onions
1 red bell pepper
3 cloves of garlic
1 tbsp. olive oil
2 cubes of vegetable stock
750 ml water
Salt and pepper to taste

Preparation

    Peel and chop the onions and garlic. Peel the sweet potato, grate the carrots and remove the seeds from the bell pepper. Cut all the vegetables into pieces.

    Heat 1 tablespoon of olive oil in a soup pan and sauté the onion and garlic for 3 minutes over low heat. Add the sweet potato, carrot and bell pepper and sauté for 5 minutes over medium-high heat. Stir the mixture occasionally.

    Add the water and stock cubes and bring to a boil. Cover the pan with a lid and let the soup simmer for 20 minutes. Stir occasionally.

    Puree the soup with the hand blender until smooth. Taste and season with salt and pepper.

    Pour the soup into bowls. If desired, garnish the soup with finely chopped parsley.
