Preheat the oven to 200°C.

Roll out the puff pastry thinly on a baking tray covered with greaseproof paper. Brush the puff pastry with some egg yolk.

Peel the sweet potatoes and cut into thin slices of ½ cm thick. Mix with 2 tbsp. of oil and cut stars out of the slices.

Cut the Brussels sprouts in half and spread them out across the puff pastry. Sprinkle the lardons over the puff pastry and then place the sweet potato stars on top. Finally sprinkle grated cheese over the entire puff tart.

Bake the tart for about 20 minutes in the middle of the oven.
