300 g sweet potatoes
250 ml buttermilk
5 tbsp flour
1/2 teaspoon baking powder
3 eggs
1 tbsp cocoa
1 mango
2 passion fruits
150 g mascarpone
optional: agave syrup
Now it’s time for a tasty dessert especially for the festive season: Delicious pancakes made from sweet potatoes with cocoa. Extra festive with mascarpone, mango slices and passion fruit. Pancakes are always tasty, and these are also quite healthy. You can also eat this dish for breakfast. Leave out the mascarpone and serve with quark or yoghurt instead.
Preparation

Peel and dice sweet potatoes. Put the diced potatoes into a pan with enough water to just cover them, and simmer for 15 minutes until soft and cooked through.

Drain sweet potatoes and mash with the buttermilk into a smooth puree. Add flour, baking powder, eggs and cocoa and stir into until smooth.

Heat some oil in a frying pan and use this batter to make some small pancakes. If the mix is too thin, add an extra spoonful of flour. Once cooked, keep the pancakes warm under aluminium foil.

Cut the mango into strips and spoon out the passion fruit pulp. Create stacks of 3 pancakes each, layering them with mascarpone and mango strips. Finish with extra mascarpone and a spoonful of passion fruit pulp. If you want more sweetness, pour a little agave syrup over them.
