Sweet potato nacho fries

Sweet potato nacho fries. Comfort food, great for any day of the week. Not only is it easy to prepare, but it's also healthy and incredibly tasty. Make these sweet potato fries regularly to enjoy an extra portion of vegetables without any effort.

Ingredients

  • 2 sweet potatoes sliced into thin fries
  • 1 diced bell pepper
  • 1 can of corn
  • 1 tbsp chilli
  • 1 red onion in half rings
  • 1 lime
  • Vinegar
  • Sugar and salt
  • 100 g (vegan) grated cheese
  • 1 diced tomato
  • Fresh coriander to taste

Preparation

    Bake the sweet potato fries for 25 min on a baking tray in the oven at 220 °C in a little olive oil and salt.

    Sauté the bell pepper along with the corn and beans in a tablespoon of olive oil. Add the herbs.

    In a separate bowl, mix the onion with 1 tbsp of lime juice, 1 tbsp of vinegar, 1 tsp of sugar and a pinch salt. Stir occasionally.

    Remove the sweet potato fries from the oven and spread the bean mixture and cheese on top.

    Put in the oven for another 5 minutes.

    Remove the fries from the oven and sprinkle tomatoes, onion and coriander on top.
