Bake the sweet potato fries for 25 min on a baking tray in the oven at 220 °C in a little olive oil and salt.
Sauté the bell pepper along with the corn and beans in a tablespoon of olive oil. Add the herbs.
In a separate bowl, mix the onion with 1 tbsp of lime juice, 1 tbsp of vinegar, 1 tsp of sugar and a pinch salt. Stir occasionally.
Remove the sweet potato fries from the oven and spread the bean mixture and cheese on top.
Put in the oven for another 5 minutes.
Remove the fries from the oven and sprinkle tomatoes, onion and coriander on top.
