Sweet potato mini burgers with avocado


2 sweet potatoes
150 g orange lentil seeds (split)
1 red onion
1 avocado
Couple of sprigs of flat-leaf parsley
2 tsp. ground cumin
1 tsp. ground paprika
1 egg
2 tbsp. flour
8 small bread rolls

Some (yogurt-based) mayonnaise to taste.

A tasty recipe for our youngest fans: sweet potato mini hamburgers. A delicious, healthy bite for after your (running) training!

    Cook the lentils until al dente (10-15 minutes). Drain the lentils. Cook the sweet potatoes until al dente and then cool. Coarsely grate the sweet potato.

    Mix the lentils and the sweet potato with the parsley, cumin, ground paprika, egg, and flour. Add more flour if it is remains too sticky. Roll and flatten the mixture into little patties.

    Slice the onion into halved rings. Cut the avocado into slices. Fry the “burgers” until each side is golden brown. At the same time, sauté the onion in a tbsp. of olive oil.

    Place a “burger”on the bread roll, add the onion and avocado slices. Enjoy!
