Sweet Potato Lentil Loaf with Fig Glaze

Ingredients:

Lentil loafs:
1 can brown lentils
350 g sweet potato, grated
1 red onion, finely chopped
2 cloves of garlic
250 g chestnut mushrooms, finely chopped
75 g oats
75 g breadcrumbs
2 tablespoons soy sauce
1 tablespoon maple syrup
1 tablespoon mustard
2 tablespoons ground flaxseed
100 g walnuts, roughly chopped
1 sprig fresh rosemary
3 sprigs fresh thyme
2 sprigs fresh sage
Generous pinch of nutmeg
Olive oil
Salt and pepper
Optional: 1 fig, sliced for decoration

Fig glaze:
5 figs
100 ml balsamic vinegar
100 ml water
50 ml red port wine
50 g brown sugar
50 g cranberry jam
1/2 teaspoon cinnamon
2 sprigs fresh thyme
Pinch of salt

 

Preparation

    Preheat the oven to 180°C and line a loaf pan with parchment paper. Heat a splash of olive oil in a pan and sauté the onion, garlic, and mushrooms for 5 minutes over medium-high heat until the onions are translucent and the mushrooms release their moisture.

    Take a large mixing bowl and add the drained and rinsed lentils. Add the mushroom mixture and mash everything briefly with a potato masher. The lentils can be coarsely mashed, but it shouldn't be a smooth puree.

    Strip the fresh herbs from their stems and chop them finely. Add the grated sweet potato, oats, breadcrumbs, soy sauce, maple syrup, mustard, flaxseed, walnuts, herbs, and nutmeg.

    Mix everything well with a wooden spoon. Season with pepper and salt. Take the loaf pan and transfer the mixture into it, pressing it down firmly. Spread 3-4 tablespoons of the fig glaze over the lentil loaf and bake in the oven for 20 minutes.

    After these initial 20 minutes, spread another 3-4 tablespoons of the glaze over the loaf and bake for an additional 20 minutes. If the top becomes too brown, cover the loaf with aluminum foil.

    Fig Glaze: Cut the figs into small pieces. Place the figs along with all the other ingredients in a saucepan and bring to a boil. Let the mixture simmer for 15-20 minutes until it thickens to a syrupy consistency.
