Sweet Potato Brownie, Lime Ice Cream, and Mango

This delectable vegan brownie stands out with the addition of sweet potato, providing an unparalleled moistness and depth of flavor in every bite.

Ingredients

500 grams sweet potato
100 grams peanut butter
100 grams coconut oil
100 grams sugar
40 grams shredded coconut
100 grams flour
125 grams dark chocolate
1 tsp speculaas spices
Pinch of salt
Lime sorbet
1 mango
4 passion fruits

    Peel the sweet potatoes, cut them into pieces, and weigh them to ensure you have approximately 350 grams needed for this recipe. Cook or steam the sweet potatoes until they are tender.

    Meanwhile, melt the chocolate in a large bowl over the pan with boiling sweet potatoes. Ensure no water comes into contact with the chocolate, as it can cause the chocolate to seize and become as thick as cold chocolate spread.

    Drain the sweet potatoes and mash them finely with a fork. Allow them to slightly cool and release steam. Mix in the peanut butter, coconut oil, sugar, and shredded coconut using a spatula. Then, stir in the flour, and finally, incorporate the melted chocolate. Season to taste with a pinch of salt and the speculaas spices.

    Line the square brownie tin with parchment paper and evenly spread the batter over the tin. Bake the brownie in the oven at 175 degrees Celsius for approximately 25 minutes. Allow the brownie to cool on a rack afterward.

    Top the dessert with a scoop of lime sorbet, slices of mango, passion fruit, and optionally, some rose petals and pumpkin seeds.
