3-5 sweet potatoes
60 g butter
120 g sugar
60 ml water
This recipe from Ms. Susie (Farmer Danny's wife and Farmer Kim's mother) really brings out the sweetness of sweet potatoes. As its name suggests, it's almost as sweet as candy!
Pre-heat the oven to 175°C.
Peel the sweet potatoes and cut them into rounded slices about 2 cm thick. Spread the slices evenly over the bottom of a large baking dish.
Cut the butter into cubes and distribute over the sweet potato slices. Add the water, then sprinkle the sugar over the top. Cover the baking dish with aluminium foil, piercing a few holes in the foil to allow the steam to escape.
Bake for 45 minutes, then check to see if the sweet potatoes have reached the desired degree of softness. If not, bake for another 15 minutes or so.
