2 ripe avocados, peeled and sliced
½ papaya, peeled and cut into chunks
2 spring onions, sliced
50 g roasted pistachio nuts
½ red chilli, chopped
Juice of 2 limes
3 tbsp almond (or other) oil
Salt and pepper
This summery salad is perfect for picnics or barbecues, but it makes a great addition to any meal!
Preparation

Arrange the pieces of avocado and papaya on an attractive plate and mix the lime juice with the oil for the dressing and season to taste with salt and pepper.

Pour the dressing over the salad and garnish with the spring onion, pistachios and chili.
