Summery chicken wraps with avocado


Makes 6 wraps:

200 g (spelt) flour
1 tsp. baking powder
Pinch of sea salt
3 tbsp. mild olive oil
175 ml water (just boiled)


500 g organic chicken breast
1 red bell pepper
1 avocado
Juice from half a lemon
Bunch of spring onions
A few butterhead lettuce leaves
Spices (ground paprika, curcuma, chili flakes, fresh parsley)

Comfort food healthy style: chicken wraps with avocado. You can of course buy wraps in the supermarket, but once you’ve tasted these homemade wraps, you’ll never want any other kind. The filling is amazingly refreshing, with a combination of avocado, lemon, vegetables, and chicken.

    Mix the flour, baking powder, sea salt and olive oil. Add small quantities of water, stirring this in with a spoon. Once cooled, you can knead the dough slightly into a malleable whole (it should still be a little sticky). Allow the dough to rest somewhere warm for 30 minutes.

    You can prepare the filling while you wait on the dough. Cut the red bell pepper into slices, coarsely chop the spring onion, and cut up the chicken in bite-sized chunks. Grill the red bell pepper with the spring onion and corn in the grill pan for a few minutes at high heat. Sprinkle the spices over the chicken and fry or grill these in the pan using a little olive oil.

    While this cooks, you can finish the wraps. Split the dough into 6 balls. Sprinkle your working surface with flour and roll out the dough until you get a thin, round wrap. Place the wrap in a warm, dry pan. Lightly fry the bottom of the wrap until golden brown. Then flip the wrap over and cook for another minute. You can keep the wraps in a tea towel (after perhaps rubbing a little olive oil over them first).

    Then it’s time for the last step: adding your fillings! Spread out a luscious layer of mashed avocado across the wrap, sprinkle with a bit of lemon juice, and then add the chicken, vegetables, lettuce, and parsley to your heart’s content. Roll, insert a cocktail stick, and enjoy!
