Strawberry salad with chicken


60 ml honey
2 tablespoons white wine vinegar
1 teaspoon dijon mustard
60 ml extra-virgin olive oil
sea salt and fresh black pepper

120 gram baby spinach
125 gram sliced strawberries
250 gram chopped roasted chicken
25 gram 25 gram chopped walnuts

A fresh spring salad with spinach, strawberries, roasted chicken and walnuts.

    Whisk the honey, vinegar and mustard together in a small bowl. Gradually drizzle in oil, stirring constantly with a whisk. Season to taste with salt and pepper.

    In a large bowl combine the spinach and strawberries together. Drizzle lightly with dressing and toss gently. Place the chicken on top and sprinkle with and walnuts. Serve with additional dressing on the side.
