250 g strawberries, in small dices
1-2 tbsp sugar
150 g strawberries, diced
50 g sugar
½ tsp lemon juice
150 g cottage cheese
2 gelatine leaves, soaked in cold water
1.5 dl cream, beaten stiff
A few strawberries, cut into pieces (garnish)
A delicious velvety strawberry mousse. This mousse is at its best when made with fresh strawberries.
Mix the 250 g strawberry pieces with 1-2 tablespoons of sugar and divide between four glasses.
Puree the 150 g strawberries with 50 g sugar and the lemon juice. Stir in the cottage cheese.
Dissolve the gelatine sheets in warm water. Stir 2 tablespoons of strawberry puree through the gelatine.
Mix this with the rest of the strawberry puree, stirring continuously.
Cover and chill until slightly firm.
Now stir the mixture until smooth and carefully mix in the whipped cream.
Now divide the mousse between the glasses, cover and leave to set in the fridge (at least 2 hours).
Just before serving, garnish the mousse with pieces of strawberry.
