Spring tarts with green asparagus


4 slices of puff pastry
2 eggs
4 green asparagus spears
2 tbsp milk
2 spring onions
Salt and pepper
100 g grated cheese

You will also need: 4 cupcake tins or small oven-proof dishes

These mini spring tarts are extra tasty with green asparagus and are delicious for brunch.

    Preheat the oven to 200° C. Grease 4 cupcake tins (or other small oven-proof dishes) with butter. Let the puff pastry thaw out.

    Cut the green asparagus into pieces about 3 cm long. Boil for 5 minutes. Cut the spring onion into rings

    Line the cupcake tins with the puff pastry and fold over the edges a little. Distribute the green asparagus among the tins.

    Combine eggs, milk, half the cheese and spring onion. Season with a pinch of salt and pepper to taste.

    Pour the mixture into the cupcake tins (just over half full since the mixture will rise). Sprinkle the remaining cheese over the top.

    Bake in the oven for 20 minutes.

    Tip: Also really good with smoked salmon.
