Spicy avocado soup with dutch shrimp


Small red onion, finely diced
Garlic (one clove)
2 ripe avocados
500 ml vegetable stock
Cayenne pepper & salt, to taste
Coriander or parsley
1 lime
Dutch shrimp
Handful Bugles Sweet Chilli crisps
½ red bell pepper, sliced into rings

Fresh avocado soup with a hint of spice. Serve this soup with Dutch shrimp, Bugles and red bell peppers.

    Heat a bit of (olive) oil in a pan and sauté the onion for 5 minutes. In the last minute, press the garlic above the pan and sauté with the onion.

    In the meantime, finely chop the coriander (or parsley). Spoon the avocado flesh into the sautéed onion mixture.

    Add the vegetable stock, cayenne pepper, salt and coriander (or parsley) and bring to a boil.

    Remove the pan from the fire once the “soup” starts to boil and blend using a mixer until the soup is smooth. Add the lime juice last.

    Serve with Dutch shrimp, crumbled Bugles and finely sliced red bell pepper.
