Shrimp salad with avocado of farmer roberto from chile
250 g jumbo shrimps, cooked and peeled
2 tbsp. mayonnaise
2 tbsp. ketchup
2 tbsp. lemon juice
We received this recipe from our farmer Roberto in Chile. This simple salad is enjoyed everywhere in Chile – even on the beach. It's delightfully refreshing, quite filling and – best of all – absolutely scrumptious. It’s also easy to make. What could be better?
Cut the avocado in half, remove the seed, peel the halves, and cut the avocado flesh into pieces. Cut the tomato and onion into pieces as well.
Stir-fry the shrimps for a few minutes. Combine the ketchup with the mayonnaise in a small bowl to make a light pink dressing.
Distribute the avocado, tomato, onion and shrimps equally between two plates. Pour the pink dressing over the salads. Top them off with a splash of lemon juice.
