Salmon Ceviche
with mango and passion fruit


250 grams of raw salmon
2 passion fruit
1 small red onion
red pepper
fresh mint
1 mango
piece of (bake) bread

With this snack you will surely impress your guests. The combination of raw fresh salmon with mango and passion fruit is irresistibly delicious. You can also make it as a tartare.

    Start by making the crostinis. These are crispy toasts made of bread. Cut the bread into thin slices and brush them with a little olive oil. Sprinkle with coarsely ground pepper and a pinch of salt. Bake for about 10 minutes until golden brown in the oven at 180 degrees.

    Halve the passion fruits and stir the flesh in a bowl. Finely chop the red onion and add about 1 tablespoon to the passion fruit. Finely chop a piece of red chili pepper (to taste). Cut 10 leaves of fresh mint into wafer-thin strips. Stir together with a pinch of salt and pepper.

    Clean the mango by slicing off the skin and cutting the flesh away from the seed. Cut the mango into thin equal slices. Also cut the salmon into thin slices.

    Dress the plates by overlapping the mango and salmon alternately. Divide the passion fruit over the salmon and mango. Serve on individual plates. Eat with the crostinis.
