Preheat the oven to 200 degrees.

Place the goat’s cheese on a baking tray lined with baking paper. Drizzle the goat’s cheese with honey and sprinkle with some fresh thyme. Bake for 8–10 minutes in the preheated oven, until the goat’s cheese is soft and warm. Fancy a lightly caramelised crust? Switch on the grill for the last 1–2 minutes (keep a close eye on it, as it can happen very quickly).

Make a dressing with olive oil, balsamic vinegar, mustard, pepper and a pinch of salt.

Cut the avocado into slices.

Arrange the lettuce on a serving dish and top with the avocado, blueberries, red onion and walnuts.

Place the warm goat’s cheese on top and drizzle with the dressing. Finish with some fresh thyme and a little more honey.

Delicious served with a toasted roll.
