Salad with mango, chicken and chili pepper


1 mango
1 spring onion
1-2 chili peppers
1 limes
1 chicken breast
1 bag mixed salad greens
handful of fresh coriander*
1 tsp. oil

Mango, chicken, and chili pepper; a wonderful combination of flavours in a salad. Great for lunch, as well as being a perfect starter or light main course salad.

    Cook the chicken breast at least one hour in advance and allow this to cool completely.

    Dice the chicken. Finely cube the mango. Remove the seeds and septums from the pepper and finely slice. Slice the spring onions into thin rings. Juice the lime. Finely chop the coriander*.

    Place the chicken breast, mango, chili pepper, spring onions, and coriander in a bowl. Add the lime juice and toss well. Drizzle the oil over this and mix well again.

    *If you don’t like coriander, you can also use parsley.
