These wraps not only look very festive, but they are also bursting with flavour! Discover the ultimate taste experience of these summery beetroot wraps filled with green asparagus, leafy spinach, and hummus, among other things.
4 red beetroot wraps 250 g hummus 250 g green asparagus tips 100 g plant-based feta 125 g leaf spinach 200 g sun-dried tomato strips 2 tbsp olive oil Pepper and salt to taste
Marinate the asparagus tips with olive oil, pepper and salt in an oven dish. Bake in the oven at 175 °C for 2 x 8 minutes.
Stir the asparagus after the first 8 minutes.
While the asparagus is in the oven, top the wraps with the remaining ingredients in the middle of the wrap, in a line. Then top with the cooled asparagus. Roll them up tightly.
Cut the wraps in half and secure with toothpicks or string. Looks great, doesn’t it?
