Quinoa salad with pomelo

This salad makes a great lunch for four people. If you’d like to make it for dinner, add some spicy chicken skewers. You can’t go wrong with this salad out on the buffet table during a delicious barbecue dinner.

Ingrediënts

200 g quinoa
½ pomelo
3 finely chopped spring onions
75 g finely grated carrots
50 g unsalted peanuts
1 tbsp. soy sauce
1 tbsp. honey
juice from one lime
a piece of ginger

Preparation

    Peel the pomelo (see how to do this here) and cut the flesh into portions. Finely slice the ginger.

    Cook the quinoa as instructed on the packaging.

    Now make the dressing for the salad. Mix the soy sauce, honey, lime juice, and ginger slices in a small dish.

    Once the quinoa is cooked and then cooled, you can mix everything together. First stir the grated carrots into the quinoa.

    Then mix the dressing in. Make sure that the flavours are well mixed. Now gently fold the pomelo and spring onions into the quinoa salad.

    Serve the quinoa salad on a pretty plate, garnished with the unsalted peanuts.
