Pomegranate Trifle with fromage frais and granola


1 pomegranate
500 ml of low-fat fromage frais

For the granola:
1 coconut
100g rolled oats
20 g pumpkin seeds
20 g sunflower seeds
20 g mixed nuts
1 tsp cinnamon
pinch of salt

Fromage frais, granola and exotic fruit: a tasty and healthy way to start your day. Make this trifle with fromage frais, pomegranate and homemade coconut granola. Delicious and healthy for breakfast, but also very nice as a dessert!

    Preheat the oven to 200 °C.

    Open the coconut. Chop the coconut into small pieces. Coarsely chop the nuts. Mix the coconut pieces and nuts with the rolled oats, pumpkin seeds, and sunflower seeds. Add the cinnamon and salt and mix together. Spread onto a baking tray.

    Bake the granola for about 12 minutes until golden. Turn from time to time. Remove from the oven and leave to cool.

    Cut the pomegranate and remove the kernels.

    Spoon some of the fromage frais into two glasses. Add some granola on top of the fromage frais. Spoon some pomegranate kernels on top. Continue to add layers until all ingredients have been used. Finish with a generous layer of pomegranate kernels.
