Cut the dragon fruits in quarters, lengthwise. Peel them by carefully pulling the skin. Chop them into large cubes.

Tear the mint leaves into small pieces. I only added two leaves because too much can be very overpowering.

Place the dragon fruit in a bowl. Drizzle with agave nectar. Toss well to ensure the fruit is completely coated with the syrup. Some juice will form at the bottom of the bowl. Add the mint. Toss occasionally. Let stand for at least 10-15 minutes.

*Agave nectar is a natural sweetener. You can find it in specialty stores such as Whole Foods and in many regular grocery stores. Agave nectar is made out of the purified sap of cactus-like desert plants.
