Passionfruit Mango Mousse

This delightful passion fruit mango mousse is a perfect conclusion to your Christmas dinner. With just a few steps, you'll have something delicious on the table. Are you up for it?

Ingredients

Crust
100 grams cookies of your choice

150 grams mango
150 ml (plant-based) whipping cream
200 grams (plant-based) cream cheese
1 teaspoon vanilla extract
35 grams powdered sugar (substitute)
15 ml lemon juice
1 packet stabilizer for whipping cream

Passion Fruit Jelly
150 grams passion fruit
25 grams sugar (substitute)
10 grams cornstarch
Splash of water

Preparation

    Puree the mango with a hand blender.

    Whip the whipping cream until it forms soft peaks, then add the stabilizer and incorporate the cream cheese. Mix until you have a smooth and uniform mixture.

    Add the vanilla extract, powdered sugar (or substitute), and lemon juice. Mix until you have a smooth mousse. Place the mango mousse in the refrigerator for at least 3 hours.

    Squeeze the passion fruit to extract the juice and strain out the seeds.

    Heat the passion fruit juice together with the sugar (or substitute).

    Combine the cornstarch with a splash of water and add it to the passion fruit juice. Allow it to simmer gently until it thickens. Let the passion fruit jelly cool.

    Crush the cookies and distribute them among 4 glasses. Spoon the mango mousse and passion fruit jelly on top. Enjoy!
