Passion fruit Souffle
3 egg yolks
100 gr sugar
15 cl passion fruit juice*
6 egg whites
1 el butter
juice of half a lemon
Our Discovered passion fruit tastes delicious in desserts. This recipe for soufflé with passion fruit is a must for every party dish!
In a bowl, cream the egg yolks, half of the sugar and two-thirds of the fruit juice.
In a separate clean bowl, whisk the egg whites with the rest of the sugar
Fold the egg white mixture gently into the egg yolk mixture.
Spoon the mixture into 4 small buttered and sugared soufflé moulds. Bake at 180C for 12 minutes.
Mix the remaining fruit juice with two tablespoons of sugar, lemon juice and some water and bring to a boil.
Strain the mixture. Serve this sauce lukewarm and separately with the souffles.
Serve the soufflés immediately after they are ready.
* To make juice without seeds: rub the pulp through a sieve or press the two halves with a juicer.
