6 gelatine sheets
9 passion fruits
2 tablespoons brown sugar
100 g sugar
1 vanilla bean
100 ml milk
500 ml cream
Our Discovered passion fruit tastes delicious in desserts. This recipe for panna cotta with passion fruit is a must for every party dish!
Put the gelatine sheets in cold water for 10 minutes, keep 1 sheet separate. Scrape the seeds from the vanilla bean.
Halve passion fruits and scoop out the pulp into a saucepan. Gently boil the pulp for 2 minutes. Scoop out 2/3 of the pulp and put it through a sieve into a bowl. Set aside.
Stir the brown sugar through the rest of de fruit pulp in the saucepan and cook until just simmering. Put 1 gelatine sheet in and stir until the gelatin is completely dissolved. Pour the mixture into 6 moulds.
Place cream, milk, sugar, vanilla in a saucepan. Stir on low heat until sugar has dissolved. Stir the sifted passion fruit pulp into the cream mixture. Cook until just simmering. Whisk the gelatine sheets through the mixture until completely dissolved. Pour the entire mixture through a sieve and let cool. It must be cold enough to not melt the passion fruit jelly that is already in the moulds.
Divide the cream mixture over the 6 moulds en put everything in the fridge for at least 3 hours. Remove panna cotta from refrigerator 10 minutes before serving. Dip moulds into warm water for 3-4 seconds and invert onto serving plates.
