Pancakes with passion fruit caramel sauce


4 passion fruits
2 tbsp honey
100 g butter
Pinch of coarse sea salt

For the pancakes:
4 bananas
2 eggs
4 tbsp flour
Pinch of cinnamon (or mixed spice)

Especially for you, these delicious banana pancakes with passion fruit caramel sauce. You can't stop eating them!

    Scoop the passion fruit pulp out of the skin. Heat honey, butter and a pinch of sea salt in a pan. Simmer the passion fruit juice until it forms a lovely deep yellow caramel sauce.

    Mash bananas finely with a fork. Combine with the eggs, flour and cinnamon. Divide the thick batter into small portions. Fry these American-style pancakes in a buttered frying pan over a low heat for about 2 minutes. Flip over and fry the other side for another minute until done.

    Serve these warm American-style pancakes warm straight from the pan. Cut a few more banana slices to go with them and sprinkle with a little cinnamon. Pour the passion fruit caramel sauce over the pancakes. Enjoy!
