2 Discovered sweet potatoes
1 red onion
4 eggs
175 g grated cheese
2 tbsp olive oil
1 tbsp paprika
1 tsp salt
1 tsp pepper
A delicious sweet potato omelette. Perfect for lunch!

Pre-heat the oven to 230°C.

Cut the sweet potatoes into chunks and sprinkle with paprika, salt and pepper.

Arrange on a baking sheet lined with greaseproof paper and place in the middle of the oven. Bake for 30 minutes until cooked (turn the pieces over after 15 minutes).

Meanwhile, fry the onions in a frying pan. Remove the sweet potato chunks from the oven and add to the onions in the pan.

Break the eggs into a bowl and beat lightly with a fork. Pour the mixture over the onions and sweet potato chunks in the pan.

Lastly, sprinkle a little cheese over the whole omelette and cook until the egg is cooked through and the cheese is melted.
