Omelette with green asparagus


1 bunch of green asparagus
pepper and salt
4 eggs
knob of butter
Optional: 1 tbs. finely chopped chives

A delicious omelette with green asparagus. Perfect for breakfast, brunch or a light lunch. Fast and easy to make!

    Cut off the woody bottom of the asparagus. Grill the asparagus until slightly al dente. Season with salt and pepper. Put them aside.

    Beat 2 eggs. Melt butter in a frying pan, then add the eggs over a medium heat. Place a quarter of the asparagus inside the omelette. Repeat the process for the other omelette.

    Place each omelette on a separate plate and sprinkle the chives over the top if desired.
