8 sheets of pie dough
4 eggs
200 ml milk
80 g goat cheese
1/2 tbsp. thyme
1 handful of walnuts, coarsely chopped
4 fresh figs
Honey
These little treats will be a hit at every get-together: mini-quiches made with goat cheese and fresh figs. They can be served either warm or cold. Perfect for the holidays because you can make them ahead!
Preparation

Preheat the oven to 200° C. Put the sheets of pie dough on a work surface to thaw out.

Combine the milk, eggs, goat cheese, thyme and chopped walnuts.

Use a muffin tin to mould your mini-quiches. Line each cup in the muffin tin with a sheet of thawed pie dough.

Now fill the shells half-way with the egg and milk mixture. Then slice the figs through the middle lengthwise and place one of these halves on each quiche with the pink side up.

Bake the quiches in the oven for about fifteen minutes. When the egg and milk mixture is dry to the touch, they're done.

You can drizzle some honey onto the quiches just before serving.
