Preheat the oven to 200 degrees.

Prick the sweet potatoes all over with a fork. Place them on a baking tray in the preheated oven and roast for 45–60 minutes, until tender.

Slice the red onion into thin rings and place them in a bowl with the vinegar, water, sugar and a generous pinch of salt. Leave in the fridge for at least 30 minutes.

Mash the avocado with the cottage cheese, lime juice, garlic, chilli flakes, and a little salt and pepper.

Fry the minced meat with the paprika, cumin and oregano.

Cut the cherry tomatoes into quarters.

Cut the sweet potatoes in half.

Fill the sweet potatoes with the minced meat and top with the avocado mash. Scatter the cherry tomatoes on top.

Finish with the pickled red onion, honey and a few extra chilli flakes.
