Cut the lemongrass stalks into large pieces. Peel the ginger and cut into pieces.

Bring the water to a boil and add the ginger and lemongrass. Now add the cinnamon stick and star anise.

Gently simmer for 5 to 10 minutes. Pour the mixture through a strainer.

Serve the strained drink warm, add some honey to taste.
