Kumquat salad with avocado and sesame


200 grams of lamb’s lettuce
1 cucumber
1 punnet of kumquats
1 avocado
1 egg
2 tbsp. sesame seeds
2 tbsp. olive oil
1 lime

This main-meal salad is very easy to make. The kumquats which look like miniature oranges have a bittersweet taste. A delicious combination with creamy baked avocado and sesame.

    Kumquats look like miniature oranges with edible skin. Wash them before slicing them. Cut them into thin slices. Keep the ends separate as well as any seeds. The taste is bittersweet and the fruits contain a lot of vitamin C and potassium.

    Halve the avocado and remove the seed. Cut the avocado into 8 sections. Then peel off the skin. Beat an egg, dip the avocado in it, and place the avocado sections with the convex side on a plate. Sprinkle with sesame seeds. Bake the avocado slices in a frying pan in a dash of olive oil over medium heat until golden brown.

    Make the dressing from 2 tbsp. olive oil and lime juice. Add salt and pepper to taste. Slice a cucumber into thin strips, or use a spiral slicer to create long strings. Check the lamb's lettuce and divide on the plates. Mix the dressing with the kumquats and cucumber and divide over the lettuce. Garnish the salad with baked sesame avocado.
