Zest the lime (see how to zest a lime HERE) and then juice it. Finely dice the garlic and red pepper.

Mix the juice and oil. Mix this with the lime zest, garlic, oregano, red pepper, and eventually some salt if necessary. Let the chicken legs marinate in this mixture for at least 30 minutes, covered.

Shake off the chicken legs and lay them on the grill pan or barbecue grill. You can also pre-cook the chicken in the oven for 30 minutes at 160°C.

Baste the chicken legs with butter every 10 minutes (regardless of whether it’s on the barbecue, grill pan or in the oven), turning them regularly. Grill the chicken legs for 30 minutes until done.
