It's lunchtime! We can’t get enough of green asparagus, especially when grilled! Enjoy it as a side dish for a BBQ or any meal.
Ingredients
400 g green asparagus 100 g (steamed) edamame 100 g peas 50 g vegan feta 50 g pistachios Fresh parsley Dressing of 1 tbsp olive oil, 1 tbsp lemon juice, salt and pepper
Preparation

Grill the asparagus with some olive oil in a frying pan.

Sprinkle with salt and pepper. Wait until al dente and slightly discoloured.

Cook the peas in boiling water for 5 minutes.

Place the grilled asparagus on a plate and top with edamame, peas, feta, pistachios, the dressing and fresh parsley.
