Green asparagus pie with Pecorino & bacon


6-8 slices of puff pastry
3 eggs
500 g green asparagus
4 slices of bacon
300 ml cream
1 tsp. mustard
50 g pecorino, grated

The combination of asparagus with pecorino is so delicious in this savoury pie. Great for lunch and for dinner. Serve with a tasty salad.

    Preheat the oven to 200 ºC.

    Place the thawed slices of puff pastry against each other in a rectangle and roll them out a little more with the rolling pin so you have one large piece of pastry.

    Place the puff pastry in a butter-greased baking pan. Prick some holes in the pastry base with a fork. Bake the base in the oven for 10 - 12 minutes. Remove the baking tin from the oven.

    Meanwhile, remove the tough ends of the asparagus. Finely chop the bacon and fry it in a non-stick frying pan over a medium heat until golden brown and crispy.

    Beat the eggs, cream, mustard and some salt and pepper in a bowl. Add most of the pecorino, stir in the bacon and pour the mixture into the pastry base.

    Carefully place the asparagus. Sprinkle with the rest of the pecorino, bake the pie in the oven for 20 minutes - until the filling has just set.

    Let the pie rest for 15 minutes. Serve with a green salad.
