1 bunch of green asparagus
250 g jumbo shrimp
2 cloves of garlic
Salt and pepper
For the sauce:
1 tbsp. olive oil
1 clove of garlic
A unique casserole made of green asparagus, jumbo shrimp, and mango, with a delicious avocado sauce.
Preheat the oven to 200°C.
Remove the woody bottoms off the green asparagus and then cut the remaining stalks in half.
Sauté the jumbo shrimp for a couple of minutes in a wok. Peel and press the garlic.
Grease a casserole dish with olive oil and the pressed garlic. Spread the asparagus and jumbo shrimp out in the dish. Sprinkle with salt and pepper to taste.
Bake in the oven for 15 minutes.
Cube the avocado (see how to do this here). Peel the garlic and finely dice it. Then place the avocado cubes into a blender, together with the garlic and olive oil. Add the juice of a half a lime and mix everything into a sauce.
Cube the mango. Remove the casserole from the oven, spread the mango cubes over the top and add the avocado sauce. Enjoy!
