175 g butter
225 g brown sugar
1 egg
4 tbsp sugar (or golden syrup)
275 g plain flour
2 tsp ground ginger
2 tsp baking soda
½ tsp salt
2 tbsp Discovered fresh ginger, finely chopped
Delicious ginger biscuits with a rich, full flavour. The perfect accompaniment for tea or coffee!
Preparation

In a large bowl, cream the butter and sugar until smooth and creamy. Beat in the eggs and sugar (or golden syrup). Mix in the flour, ground ginger, baking soda and salt with a wooden spoon. Lastly, add the fresh ginger. Cover the dough and leave in the refrigerator for at least 2 hours or overnight.

Preheat the oven to 180°C. Roll the dough into 2.5 cm balls. Arrange the balls about 5 cm apart on an ungreased baking sheet. Flatten the balls slightly.

Bake the biscuits in the oven for 10 minutes until lightly browned. Allow to cool on a rack.
